For -9°F (-23°C) Ultra Cold Units: Simply freeze your COLD CateringStone Unit overnight on its side until frozen solid label side up. (Up to 48 hours on first use) The freezer has to be
set to -10°F, or lower. When the unit is frozen solid there will be a small amount of air in the bottle under the label. For best results use the stone label side down so the air pocket is away from the food. Use in transportation, chafing dish water pans, plating lines or wherever cold is needed. With our additional stainless steel covers and passing platters, you can even serve with them.
For 14°F (-10°C) Consistent Cold Units: Simply freeze your COLD CateringStone overnight on its side until frozen solid label side up. The freezer should be
set to 0°F, or lower. When the unit is frozen solid there will be a small amount of air in the bottle under the label. For best results use the stone label side down so the air pocket is away from the food. Use in transportation, chafing dish water pans, plating lines or wherever cold is needed. With our additional stainless steel covers and passing platters, you can even serve with them.
For 175°F (80°C) Palate Pleasing Hot Units: Simply heat HOT CateringStones in a
boiling water bath until contents are fully melted. You can use stock pots, food warmers or a water bath in an oven, but
do not heat in microwave or place directly in an oven as this will destroy the unit. Make sure Stones float in water and that the water bath does not run low, so as to not touch any heating surface due to evaporation. You may even place a dish towel around them or in the bottom of the heating unit to protect them. Use in transportation devices, chafing dish water pans, or wherever heat is needed. With our additional stainless steel covers and passing platters, you can even serve with them.
How to use your Thermal Conductive Covers or Sleeves and Pads: 
After your HOT or COLD CateringStones are either heated to liquid inside or frozen solid, you simply place a cover on top and they are ready to use. The covers will heat up or cool down within a few minutes. For best results place the CateringStone Square Thermal Pads under the stone on top of the surface you are using so the cold and or heat get absorbed by the food above most effectively.
